Method
Preheat the oven to 400°F (200°C).
Arrange the halved figs cut-side up in a baking dish that holds them snugly but comfortably — they want to touch but not crowd.
In a small bowl, whisk together the maple syrup, harissa, water, lemon zest, and salt. Drizzle over the figs and gently toss so each one is coated, then settle them back into a single layer.
Cover with foil and roast for about 15 minutes, until the figs are beginning to soften.
Remove the foil and continue roasting for another 10 to 15 minutes, until the juices are bubbling and the figs are syrupy and soft — but stop before they collapse.
Let the figs cool completely in the dish before serving.
